Goan Catholic cuisine has distinct Portuguese influence as can be seen in the &amp;#039;&amp;#039;Assado de Porco&amp;#039;&amp;#039;, a famous pork roast crackling dish served as the centrepiece at wedding dinners, the &amp;#039;&amp;#039;[[Sarapatel]]&amp;#039;&amp;#039; and &amp;#039;&amp;#039;[[Cabidela]]&amp;#039;&amp;#039; (a dish where fresh pig&amp;#039;s blood is stirred into the pork delicacy). The curries use a lot of [[spice]]s and [[vinegar]]. &amp;#039;&amp;#039;Xit Kodi&amp;#039;&amp;#039; (Xit&amp;amp;nbsp;– parboiled or red rice; Kodi&amp;amp;nbsp;– fish curry) forms the [[staple food]] of the community.
