The exact origin of the dish is uncertain. The &amp;#039;&amp;#039;kachchi&amp;#039;&amp;#039; biryani is prepared with &amp;#039;&amp;#039;kachchi gosht&amp;#039;&amp;#039; (raw meat) marinated with spices overnight and then soaked in curd (dahi) before cooking. The meat is sandwiched between layers of fragrant basmati rice and cooked &amp;quot;in dum&amp;quot; after sealing the &amp;#039;&amp;#039;handi&amp;#039;&amp;#039; (vessel) with dough.
